Grissel Trujillo-de Santiago is a Professor at Tecnológico de Monterrey and CSO of FORMA Foods. She develops chaos-based technologies to create 3D micro-structured living tissues. She holds a Mexican patent and six technologies under review. Grissel has over 80 publications (6,600+ citations) and has graduated 5 Ph.D. and 16 M.Sc. students. She has been a recipient of several awards, including the award for young researchers by the Mexican Academy of Sciences, For Women in Science Fellowship from the L’Oreal-UNESCO-AMC-CONACyT foundation, the “Professional Development Award” by the ISBF, the award for Innovation in Bionanotechnology by CINVESTAV and Neolpharma and the Romulo Garza for Research that leads to entrepreneurship.
